Made them and ate them each day for breakky at work !
Ingredients:
π«85g whey protein powder (flavor of choice, I used red velvet by cellucor)
π«32g dark chocolate dreams peanut butter (or any peanut butter)
π«230g black beans, canned- rinsed and drained
π«46g liquid egg whites
π«10g unsweetened cocoa powder
π«11g sugar free, fat free jello mix ( I used chocolate)
π«8g coconut oil, melted
π«16g chocolate chips
π«1/2 tsp baking soda
π«1 tsp vanilla
π« salt and sweetener to taste
Recipe:
Preheat oven to 350. Mix together dry ingredients (whey, cocoa powder, pudding mix, baking soda, cinnamon, stevia and salt). Melt coconut oil in microwave about 30 seconds. In a blender, combine black beans, egg whites, peanut butter, melted coconut oil, and vanilla. Slowly mix dry ingredients into wet. Mix in chocolate chips. Grease pan and bake accordingly. I baked mine into mini muffins which cooked in about 12-15 min. Let cool and top with whatever your heart desires! π This recipe made 24 mini muffins. 33 cals per muffin and Macro breakdown was 3C/1F/4P π
I used a mini cupcake pan but feel free to make into normal cupcakes or even bake in a 13×9 pan. I brought them to work for breakfast or preworkout snack. You can top with peanut butter or add them into protein pudding or yogurt. Mine were a little dry alone which is why I ate them with pudding or topped with chocolate walden farms. I didn’t use coconut oil in my batch but I will moving forward. I added the coconut oil into this recipe for you to use, which should help moisten them up!! Hope you enjoy! βΊοΈ
